A yummy dinner.....and then some!

Mmmm...I boiled two big baked potatoe potatoes, scraped out the inside and "mashed" it up. I added steamed brocoli, raw zuchini, onions, bell peppers, and some cheese. Stuffed it all back in to the potatoe and baked it for like 5-10 min. OMGoodness! Soo freakin yummy. We also had steamed carrots and corn on the cob. Jeremiah had steamed carrots and banana.
We feasted like kings and queens! LOL.I super love being a vegetarian. It has really opened up a creative valve in my cooking.
Last night I stir-fryed up some veggies (zuchini, onions, bell peppers, russet potatoes) and placed them in a small casserole dish. Covered them we fresh grated cheddar cheese covered in some black bean and corn salsa. I baked it for like 5-10 min. OOO Doggy! Very good mexicanish dish! I forgot to add the jalapenos or it would have been super awesome. LOL.
Im thinking since I still have some pork chops to get rid of, tomorow I will bake those and serve it with corn on the cob and boiled veggies (chicken soup syle). Not sure yet tho.
For lunch I have been making this interesting sauce with a bit of Miracal Whip and Mustard. I put in on a tortilla with zuchini, onions, bell peppers, and cheese. It is so good. Depending on the day and what is in the fridge, I add other things. Like tomatoe...lettuce, and once I lucked out with some avacado!
And on a side note: I have lost 10 lbs total. Whew...keep it coming...OFF!Well, Lots and Lots of Love!!!!ME!!

Things been going on...

Friday...
We took Jeremiah to the drive in. We saw Dark Knight and Hancock. It was the best movie experience I have had since the little guy has been born. Usually I spend alot of time in the hall or wings of the theater because he gets restless and refuses to sleep. I took his toys and everything, he just played quitely and looked up every now and then untill he was ready to sleep. Cuddled up, and out he went. If I could just let him play in the theater it would be fine, but he's a baby, and makes his little baby noises. Daniel and I laughed, talked, and just enjoyed ourselves. We also had lots of water and our own snacks. It cost a dollar fifty less than a regular movie and we got two for one.
Saturday...
My great great aunt turned 90. We went to her party, it turned out to be a minor family reunion. LOL. Oh I so love my family. I look forward to the day I am that old. Im in no hurry mind you, I do not however mind. I hope I am as mobile and upbeat as she.
Sunday...
I went to a babyshower for a girl from church. It was nice to hang out with a bunch of females, despite the pounding headache I had. I wish I could have an after baby shower. HaHa!

So here I am today. Cleanin my house from the messes I made from this weekend. Cutting veggies to prepare for the week.
Planning for a suprise next month. **tell you about it later**
Planning for my vacation next month. And getting things ready for me to start school again come September.

Just chattin' (i mean typin') it up!

Mmmm, dinner last night was nothing short of divine. My hunny made an absolutely to die for stir-fry. I had cut carrots, zuchini(for the record, I am not the best speller, and if that offends you....dont read my blog), bell peppers, a jalpeno pepper, brocoli, onion, and a tomato. We had some angel hair pasta. He made a good sauce with seasons and olive oil. MMMMMM! It was soo good. I have a picture. Not sure how to get it on here, but as soon as I do...I will share it with you.

Today, despite the fact it is Tuesday and not Monday, was so busy it was almost hectic. Errands all over town, all day. Then I came home only to rearrange my living room. HAHA! Dinner was all rush-rush, because the hunny had to hurry off to school. It's going to be along night for him. For me as well, I plan on getting quite a bit of work done on the house while he is gone and the child of mine is sleeping.

It seems there is always so much house work to get done. No matter how much you get done the previous day, today always has so much in store for you. One day..one day! I just keep telling myself...One day I will find away to rid my life of caos. Right now, I think I'm not doing terriabley bad, I am down to the bare basics.

Preperation...

Being a mom...
I have to get some food ready for this week for my son. He is only 5 months old and the little guy has two teeth. He loves his veggie-tables and bananas. I have to steam those and blend them up for him. I hate having a hungry baby and making him wait while I make him some food.
I also have to keep up with the living room floor, and make sure the tables are clear. He is well on his way to crawling.
Today is Monday, so I am gathering up all is plastics and washing them. And throwing his stuffed ones in the washing machine.
Being a vegetarian...
I am cutting up and bagging veggies for myself. Makes quick snacking and meal grabbing easy, even with an infant.
Being a wife...
Just doing some laundry. Planing tonights dinner. And basically cleaning house.

Hopefully, the week will go smoothly!

Getting to know me....

I am a God fearing, humble servent, completely loving, woman of God. I adore my husband, I spoil my child, and I do all that I can for my friends, family, and all God's people. I currently am perfecting my skills as a domestic engineer. It's tuff-stuff organizing a home, maintaining cleanliness, raising a baby, and keeping your sanity. :D I like to think of my self as a sponge. Not only able, but eager to soak up knowlege...On most any subject. How to better be a woman of God, be a better wife and mother, how to sew a stinking outfit, how to knit, all about indoor gardening, leading a much healthier, all natural life, cooking-oh how I love to cook and create..., and soooo much more. I have one amazing little boy. He is my happy thought. His smile and little laughs could brighten even the most pessimistic gouchy persons day. I really feel that God has put a special love in my heart for children. Expecially the lost and hurt. We hope to adopt a few. And it is my deepest desire to be a foster mom. So many children are hurting physically and emotionally. I think they need love, patience, and nurturing. Not only lost children, but lost and hurting people need the love and patience as well. I have recently gotten involved with Faith City. I have met some truely amazing peopel there. I hope to be much more active there. It is unbeleiveable what a kind, understand word with a smile can do for one person. And when your on the giving end of that smile and word, you would be surprised at what you get in return. In everyday, in all I do, it is my prayer that my actions and thoughts glorify God. That is in essense what he has created not only me, but you for....His complete glorification. Being that is my purpose, I hope I not only succeed in that task...but over exceed.
What do I do for fun? I love the great outdoors. I love camping! Everything to do with camping is so much fun..fishing, hiking, climbing. Since my son has come into the world he pretty much demands the majority of my time, and really, I wouldn't have it any other way. I love spending time with him. He is so amazing. Everyday I am amazed at his changes. He learns something new everyday. I soon hope to spend more of my time helping others in any way that I can. I would like to be able to make my own clothes, grow my own food, and be pretty darn self suficient. I love thrift stores, flea markets, and freecycle. :D Giving is what is all about after all. I have done some scrapbooking in my life, and would love to pick that up again in order to record my life.
Well..thats enough for now I believe. Thank you for taking your time to get to know me. I hope we become friends and are able to uplift as well as encourage one another.
